For 4 people
Cook the tagliatelle in boiling salted water in a large saucepan for xxx minutes until they are al dente. Drain, but keep some of the water.
Melt the butter in a frying pan, and then add some of the water from the pasta to make an emulsion. Add the cooked pasta and the Parmesan to the pan, and season with salt and pepper.
Plate up, grate some truffle over each of the 4 portions. Serve immediately with more Parmesan.
